FRIED ONION SAMBOL - SRI LANKA



















Ingredients

3 medium onions, sliced finely
1/2 cup cooking oil
8 dried chilies, seeded and broken into pieces
2 tablespoons shirmp powder
Salt to taste
2 tablespoons lemon juice


Method

Heat up a frying pan with oil. Fry the sliced onion slowly until soft and transparent. Add the shrimp powder and dried chilies. Cover with a lid and cook for 15 minutes or until the oil separates from the ingredients. Occasionally stir to mix while cooking. Add salt to taste and lemon juice. Cook for a further few minutes. Serve with steamed white rice and curries for a delicious meal.
