SALMON WITH SPINACH
INGREDIENTS
- 2 Skinless salmon fillets
- 2 tbs butter
- 1 tbs olive oil
- 1 yellow onion sliced
- 1 packet (or bunch) of baby spinach
- 1 tbs red wine vinegar
- 3 tbs cream or milk
- Pepper and salt to taste.
- 1 tbs fresh rosemary chopped
METHOD
- Sprinkle the salmon with salt, pepper and rosemary.
- Add olive oil into a heated frying pan.
- Add salmon into pan and saute for about 5 minutes each side.
- Put the salmon into a plate.
- Add butter into same pan; add onion and sautfor about 30 second.
- Increase the heat.
- Add spinach and toss for 30 seconds.
- Add vinegar, cream and pepper toss again.
- Arrange spinach on top of the salmon
- Serve hot with buttered toast.
