SALMON WITH SPINACH













INGREDIENTS

  • 2 Skinless salmon fillets
  • 2 tbs butter
  • 1 tbs olive oil
  • 1 yellow onion sliced
  • 1 packet (or bunch) of baby spinach
  • 1 tbs red wine vinegar
  • 3 tbs cream or milk
  • Pepper and salt to taste.
  • 1 tbs fresh rosemary chopped

METHOD

  1. Sprinkle the salmon with salt, pepper and rosemary.
  2. Add olive oil into a heated frying pan.
  3. Add salmon into pan and saute for about 5 minutes each side.
  4. Put the salmon into a plate.
  5. Add butter into same pan; add onion and sautfor about 30 second.
  6. Increase the heat.
  7. Add spinach and toss for 30 seconds.
  8. Add vinegar, cream and pepper toss again.
  9. Arrange spinach on top of the salmon
  10. Serve hot with buttered toast.
