DRY FRIED SHRIMPS SRI LANKAN RECIPE





















Ingredients

1 kg raw shrimps, remove shells and devein
2 teaspoons dried shrimp powder
4 tablespoons cooking oil
2 large onions, chopped finely
2 cloves garlic, chopped finely
1 teaspoon chili powder
2 teaspoons paprika
1/4 teaspoon turmeric, ground
1/2 cup water
2 teaspoons sugar
1 tablespoon tomato paste
Salt to taste


Method 

Heat a heavy frying pan with oil and fry the onions and garlic over low heat until soft. When oil begins to float to the surface, add the chili powder, paprika, turmeric and salt to taste, and fry for 1 minute. Add the dried shrimp powder and the raw shrimps. Stir and fry for another 3 minutes. Add water, cover with a lid and simmer for 5 minutes. Stir in the tomato paste and sugar. Cook uncovered for a few minutes longer until gravy thickens and dark reddish brown. The gravy should be dry enough to coat the shrimps. Serve hot with steamed white rice.
