Deep Fried Karawila (Bitter gourd) Curry






















Ingredients

1 lb Bitter gourd, cut into thin slices
1/2 cup of cooking oil
1-2 fresh green chilli, finely sliced
1/2 onion, finely sliced
3-4 curry leaves (optional)
1/2 tsp ground turmeric (kaha)
1/2 tsp chilli powder
1/2 tsp curry powder
1 tbsp vinegar
1 tbsp sugar
1/2 cup of coconut milk or water
2 small tomatoes, sliced
salt to taste


Method

Heat the oil in a pan. When the oil is hot, deep fry the bitter gourd in small batches until golden brown. Drain excess oil and set a side.
Heat 1 tsp of oil in a pan. When the oil is hot, fry the onion, green chillies and curry leaves till the onion turns golden brown. Add turmeric, chilli powder, and curry powder. Next add the fried bitter gourd and vinegar. Stir gently. Next add the tomatoes, sugar and the coconut milk. Add salt to taste and serve.
