Butter Bean and Vegetable Salad






















760g tomatoes chopped coarsely
300g red onion, sliced thinly
6 green onions, sliced thinly
3x300g cans butter beans, rinsed, drained
350 capsicum chopped coarsely
260g cucumbers sliced thickly
200g feta cheese, crumbled
80ml lemon juice
2 tablespoons olive oil
1 clove garlic, crushed
1 teaspoon sugar
1/2 teaspoon sweet paprika
Combine tomato, onion, beans, cucumber and cheese in large bowl; gently toss with combined remaining ingredients just before serving.
