Beetroot Rice
300gm basmati rice, soaked for 1/2 hour and drained200gm beetroot, cut in to small cubes200gm chicken meat, cut into small pieces500ml or more water or coconut milk1 cube chicken stock (optional)Salt to taste1 big onion, finely sliced2 green chilies, cut lengthwise1 inch piece cinnamon3 cardamoms3 cloves1 star anise2-3 tablespoon oil1 teaspoon ginger paste1 teaspoon garlic paste
Heat the oil in a pan. Fry ginger and garlic till fragrant. Next add onion, green chillies, cinnamon, cardamom, cloves, star anise and fry till fragrant.Add the chicken and stir fry till the chicken is half cooked.Add the beetroot, water, salt and stock cube. Stir.Transfer into an electric rice cooker and cook till the rice done
